Cosmo's Chicken Curry


1. One medium onion. First cut in half...then cut thin half circle slices
2. Ginger - about a  1/2 to 1 inch. Chop it up into the smallest possible pieces
3. Chicken - one to two pounds, cut into small pieces
4. Olive Oil
5. Mustard Seeds
6. Coriander Powder
7. Chili Powder

Approx. 5 quart pot

1. Put 6 to 7 tablespoons of Olive Oil in pot and heat. This should take a few minutes, but don't burn the oil or let it smoke.
2. While oil is hot, throw in 1-2 pinches of mustard seeds.
3. Throw in all the onions and ginger,  and cook until it becomes a little yellow. This could take about 5 to 10 minutes.
4. Time to add spices. Follow the "2-3 rule" Two tablespoons of Chili powder and Three tablespoons of Coriander.
5. Cook for a minute or two, until spices become a thick brownish/red paste as it mixes with the olive oil.
6. Remember not to burn the spices or let it smoke too much.
7. Add your chicken and mix well. Add 1/2 cup of water.
8. Mix Well, Cover, Lower heat to medium, and cook for about 30 to 40 minutes.
9. Add salt, as you like it.
